I’m trying to get back into the swing of making quick and simple meals for our whole family.
After buying way too much meat on sale this past week, I decided to try some simple meal prepping to make sure I actually used ALL the meat and saved myself some time.
I thinly sliced steaks that were on sale, so that I could use them in my favorite asian inspired meals. I also threw together a whole bag of beef stew, including the veggies. I removed all the fat off the chicken legs, froze them together too. I find if I put more effort into one day of meal prepping for future meals, it makes my life simple.
I do have to admit, I’m not a huge fan of slow cooker meals. I mainly use my slow cooker to cook meat for more complex dishes. However, I do love throwing in a beef stew once in awhile because that is simple and so delicious! (recipe to come)
One of my favorite things to throw in my slow cooker, so I can use in many different meals, is a spicy shredded beef which I use to make some sort of Mexican inspired dish. I can then shred it, freeze it in the portion sizes we use and it’s ready to go!
I also have done a similar technique for a green chili shredded chicken that can be used for my favorite enchilada bake, thrown on salads and more! It freezes well, again I portion it out for our favorite meals and throw it in freezer bags in the freezer.
Mexican food has really inspired my cooking over the years of living in Arizona, so I try to make the foods I create full of flavor!
